Ingredients
1 cup of raw cashews
1 Tbsp of lemon zest and 1/3 cup lemon juice (about 2 lemons)
2 Tbsp nutritional yeast
1 garlic clove, chopped
1/2 tsp ground black pepper
1/8 tsp fine sea salt
1/4 chopped chives
INSTRUCTIONS
Soak cashews in boiling water and let sit 30 minutes, drain and rinse. In a blender, combine soaked cashews, 3/4 water, lemon juice, and zest, garlic, yeast, pepper, and salt, blend until smooth, about 1 minute. Stir in chives. Dressing will keep refrigerated for five days. Make 1 1/2 cups. Great for salads, slaws, and as a veggie dip or sandwich spread.
