vegan, soy-free, gluten-free
Ingredients
1 cup dry red lentils
1 1/2 cups water
2 T olive oil
3 T oil (safflower, etc)
1/4 lemon juice ( but I always do more to taste)
1-2 garlic cloves
1 t cumin
1/4 t salt
In medium pot, bring water and lentils to a boil. Reduce heat and simmer for 2-3 minutes. Remove from heat, cover, and let stand for 15 min.
In a food processor, blend everything together (including lentils) until smooth. Makes approx. 2 cups.
